Traditional desserts – Pineapple Tarts

A colleague of mine is whipping up all sorts of delicacies with her happy all pans! And they actually have a pineapple tart recipe! It was really delicious and so I improvised it for the oven!

It’s really a very crumbly pastry that I love!!

Ingredients A:
200grams of butter
40grams of caster sugar

Ingredients B:
1 egg yolk
1/4 teaspoon of vanilla essence

Ingredient C:
300grams of plain flour
25grams of custard powder
1/2 tsp salt

1kg of pineapple paste
2 egg yolks (beaten; for glazing)

Directions:

1. Sift Ingredient C and set aside
2. Divide the pineapple paste into individual balls of 1.5-2cm in diameter
3. Mix ingredient A till creamy
4. Add in ingredient B and mix well
5. Fold in ingredient C and mix to form a dough
6. Leave aside for 20 minutes
7. Form a small ball with the dough and lightly flatten to wrap it over a pineapple ball. Seal and roll it into a sphere or a pillow shape. Glaze with beaten egg yolk.
8. Bake in the oven at 160 degrees Celsius for about 15 minutes depending on your oven.
9. Let the pastry cool before removing from the pan for 10 minutes.
